Damson Extra Jam 290g
Damsons are members of the plum family native to the UK and Ireland, but the fruits are smaller and have a slightly sharper flavour. The fruit when ripe has a lovely blue/black colour and produces a firm set, richly flavoured jam. The fruit we use is hand-picked locally from foraged fruit and we remove most of the stones before cooking, but some are left in while cooking and impart a slight almond flavour to the jam. Gooseberry and Elderflower Extra Jam 290g
Elderflower is a traditional accompaniment to gooseberry and produces a preserve with a subtly different flavour from gooseberry alone. The flower heads are foraged in June and washed before the small white flowers are added to the gooseberries at the beginning of cooking. When cooked green gooseberries and elderflowers will produce a pink coloured preserve that darkens in the jar over time. Gooseberries come from the same family of plants as blackcurrants, redcurrants and raspberries, the Saxifrages. There are many different varieties of gooseberry and we use hand-picked locally sourced green gooseberries to make our jam. We pick the fruit in June at the beginning of the summer season and this is normally the first preserve of the year that comes out of the kitchen. Grapefruit Marmalade 290g
Made from ruby red grapefruit with hand cut peel this marmalade is lovely and bitter, made to our own recipe. The shreds are coarse cut, by hand, along with the flesh and juice of the grapefruit, giving the marmalade a lovely red colour. This is not suitable for anyone taking statins. This marmalade won a 2 star Great Taste Award in 2016. the judges said: “There’s a delicate, appealing aroma to this beautifully shaded marmalade, leading to some lovely bright flavours. This smells fantastic - a real promise of what's to come. Unmistakably fiery on the nose, it has rich fruit notes. The heat created with this product is fierce and a real challenge to the taste buds. The sugar hasn't been over caramelised which can impart bitterness and detract overall. The colour and consistency are just right.
Its initial sweetness is quickly overtaken by rasping heat. There is an audience for this sort of thing, for sure. A fine delivery system for instant warmth - a really fiery flavour with an undercurrent of sweetness. The heat is actually quite pleasant and lingering after that initial shock, and the fruit of the chilli comes through and hangs around. For chilli fiends and heat junkies this would be a massive hit. Delicious as a condiment and equally good as a versatile ingredient (marinades or dips and sauces). A well made chilli jam that tastes homemade. -

Tayberries are a raspberry/blackberry hybrid and originate from the banks of the River Tay in Scotland. The fruit is similar to a loganberry, but is sweeter and more aromatic. The fruit is hand picked at Maynards, a fruit grower in Wadhurst, Kent, during their short season – not an easy task! – so this is available in limited quantities.
